Recept: Vegetarische ceviche

Ingredients (4p):

  • lime juice (1cl)
  • ginger (5g)
  • corianders (5g)
  • pepper (3g)
  • salt (3g)
  • sesame oil (3ml)
  • olive oil (1cl)
  • fresh garlic (4g)
  • avocado (2 pieces)
  • cucumber (1/2)
  • mango (1/2)
  • cherry tomatoes (45g)
  • shallot (1/2)
  • almonds (10g)
  • coriander (10g)

Preparation:

Mix the following ingredients for the marinade in the blender until everything is smooth: lime juice, ginger, coriander, allspice, salt, sesame oil and fresh garlic.

Cut the avocado, cucumber, mango, cherry tomatoes and shallot and mix everything together with olive oil.

Add the marinade to the sliced ​​vegetables

Stuff the avocado and finish with almonds and coriander.

Festive mocktail

Mocktail Garnitush: 

  • gelatin (2 leaves)
  • peach compote(250g)
  • ice cubes (4)
  • kaffir lime (1)

Preparation

Requirements: espuma bottle

Heat the compote and dissolve the gelatin in it. Mix the mixture with 100 ml of the Lemongrass & Chili mocktail, strain well and put it in the espuma bottle. Let rest for 4 hours in the refrigerator.

Put 150 ml of the Lemongrass & Chili mocktail in a glass with the ice blocks.

Shake the espuma bottle well and spray a layer of espuma on the mocktail. Finish with the zest of a kaffir lime.
